Canning Basics: How To Preserve Your Food

Canning your food at home helps to keep flavour and quality in your food. The process of canning includes heating containers of food to destroy micro- organisms that contribute to food spoilage. During cooling, air escapes the container and a vacuum seal is formed. The vacuum seal prevents air from getting back into the container and contaminating the food with micro-organisms.

Here are some helpful canning tips:

Use a food- safe sealing compound to aid with maintaining the seal.

Tools that will be helpful for canning include hot pads, jar lifter, jars and a pressure canner.

The boiling water bath method and the pressure canner method are two safe ways to preserve food.

The best containers to use are ball jars and mason jars built for home canning.
